Ingredients

Whole grain bread
1 ripe avocado
Salt and Pepper to taste
Sliced cucumbers (for eyes)
Olives or cherry tomatoes (for pupils + monster hair if desired)
Red bell pepper (for fangs or tongues)

Instructions
  1. Toast the bread.
  2. Mash the avocado and season as desire. 
  3. Spread it over the toast.
  4. Create a monster face using cucumber slices for eyes, olives or cherry tomatoes as pupils + hair if desired, and bell peppers for a tongue or teeth.

2. Pumpkin Protein Smoothie

This creamy smoothie tastes like fall in a glass.

Ingredients

1/2 cup pumpkin purée
1 banana (frozen for creaminess)
1 scoop vanilla protein powder
1/2 tsp pumpkin spice
1 cup unsweetened almond milk (or milk of choice)
Ice (optional)

Instructions
  1. Blend all the ingredients until smooth.
  2. Top with a sprinkle of cinnamon or some pumpkin seeds for crunch.

3. Spooky Stuffed Bell Peppers

These bell peppers make a festive main course—think of them as edible Jack-o’-lanterns!

Ingredients

4 bell peppers (orange, yellow, or red)
1 lb lean ground turkey or plant-based crumbles
1 cup cooked quinoa or brown rice
1/2 cup black beans
1/2 tsp cumin
1/2 tsp paprika
Shredded mozzarella (optional)

Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds. Carve Jack-o’-lantern faces into them.
  3. In a skillet, cook the turkey or plant-based crumbles with spices. Mix with quinoa and black beans.
  4. Stuff the peppers and top with cheese if desired.
  5. Bake for 20-25 minutes.

4. Ghostly Yogurt Bark

This easy frozen treat makes can satisfy a sweet craving, as well as keep you a bit more full!

Ingredients

2 cups + 1/4 cup plain Greek yogurt
2 tbsp flaxseed
1/4 cup dark chocolate chips
Fresh or frozen berries 

Instructions
  1. Line a baking sheet with parchment paper
  2. Blend 2 cups of the Greek yogurt with fresh or frozen berries of choice
  3. Pour mixture over the baking sheet, spreading about 1 cm thick
  4. Use remaining plain Greek yogurt to create ghosts (blob a spoon of yogurt down, swirl a tail shape, and pull out two little arms)
  5. Decorate with chocolate chips to create eyes
  6. Freeze for 2-3 hours or overnight
  7. Peel off baking sheet and break or cut apart

5. Pumpkin Hummus

This creamy and delicious hummus makes a great appetizer for parties!

Ingredients

1 small pumpkin
olive oil
2 garlic cloves
1/2 lemon, juiced
400g of chickpeas, drained and rinsed
Toppings of desire – bell pepper, pitta chips, carrot chips, ext.

Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Cut off top of pumpkin, remove seeds and scoop out the flesh at the bottom of the lid
  3. Cut pumpkin flesh into pieces and place on roasting pan. Season with drizzle of olive oil and garlic. Bake 45 minutes until very tender, then leave to cool
  4. Tip pumpkin into food processor, add lemon juice and chickpeas. Season with salt and blend into a paste.
  5. Scoop hummus back into pumpkin and serve with desired toppings

6. Naan Ghost Pizzas

These delightful naan pizzas are fun for the little ones to decorate, and tasty for any party or gathering

Ingredients

1 package naan rounds (I use stonefire’s)
Pizza sauce of choice
Shredded mozerella
Shredded cheddar jack cheese
Olives for eyes
Additional veggies for decorating (peppers, onion, ext.)

Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Cut Naan rounds into ghost shapes (I typically make the bottoms look like sheet ghosts with zig zags!)
  3. Spread pizza sauce on top
  4. Place olives as eyes
  5. Decorate ghosts with additional toppings as desired
